There's about a day left for Sweet Charity bidding.
Approximately 200 Ho's, some of them willing to take on more than one clever trick, including yers truly.
We've hit the $10,000 mark, but seriously, I know some of you are waiting for just the right moment, like 10 seconds before the bidding is over.
You totally are.
I've got fiction and critiques and tea sets and bound fiction and customized recipe books up for auction. And while I'm not promising to bake cookies for you (although some people are) I'm totally willing to bribe you with cookies.
Yummy cookies. Cookies you can make and eat at your tea party. Cookies you can nibble on while reading, or tempting me with a dozen bunnies. Cookies you can share. Or you know, not....
Pecan Sandies
2 1/2 C plain flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 C sugar (plus 1/8 C sugar)
1/2 C Crisco shortening
1 stick unsalted butter
1 large egg
1 tsp vanilla
1/2 C chopped pecans
Wax Paper
Sift first four ingredients together. Cream sugar, shortening & butter together, then a beat in egg and vanilla. Add dry mix and pecans to butter mix, and mix well.
Place batter in refrigerator for 10-15 minutes to firm up. Remove and divide in half. Roll the two sections into logs, about 1 inch thick, wrap in wax paper and put in refrigerator for at least 1 hour (Or freeze for 30).
Preheat oven to 350 degrees (Preheat it to the full temperature. You can store cut cookies in the refrigerator until the temp is right.)
One log at a time, slice off sections of cookie about an inch thick and place on ungreased cookie sheet. Immediately place in oven.
Bake at 350 degrees for 8 to 10 minutes. Cookies should not brown appreciably. Immediately upon removing, sprinkle with reserve sugar. Allow to cool.
You can freeze this dough for up to a week. Make sure to wrap it in wax paper, and then loosely in saran or foil.
For something more exotic and special, use 1 tsp ground cardamon instead of the cinnamon and use pistachios instead of pecans. Instead of the sugar sprinkles, take orange marmalade, warm slightly in the microwave and use a pastry brush to glaze the top of cooled cookies.
